Ingredients
  

  • 1 (15-ounce/425g) canchickpeas drained and rinsed
  • 1 avocado pitted and diced
  • 4 ounces/115g feta cheese crumbled
  • ½ cup/75g red onion thinly sliced
  • ½ cup/50g fresh parsley chopped
  • ¼ cup/25g fresh mint chopped
  • 3 tablespoons/45ml olive oil
  • 2 tablespoons/30ml lemon juice freshly squeezed
  • 1 clove garlic minced
  • ½ teaspoon/2.5ml dried oregano

Equipment

  • Large Mixing Bowl: For combining all the salad ingredients and tossing with the dressing
  • Small Bowl or Jar: For whisking/shaking the dressing ingredients.
  • Whisk or Fork: To mix the dressing.
  • Can Opener: To open the can of chickpeas (if using a can).
  • Colander/Strainer: To drain and rinse the chickpeas.
  • Cutting Board: For dicing the avocado and slicing the red onion
  • Chef's Knife or Paring Knife: For prepping the avocado, red onion, parsley, and mint.
  • Measuring Spoons and Cups: For measuring the olive oil, lemon juice, oregano, and chopped herbs/onion.
  • Garlic Press or Knife: For mincing the garlic.

Method

Notes

  • For the best flavor, use fresh lemon juice.
  • If preparing in advance, wait to add the avocado until just before serving to prevent browning.
  • You can adjust the amount of red onion to your preference. Soaking the sliced red onion in cold water for 10 minutes before adding it to the salad can reduce its sharpness.
