Ingredients
  

Main Ingredients
  • 1 package 14 oz package extra-firm tofu Regular firm also works.
  • ½ to ⅔ cup plain, unsweetened vegan yogurt Adjust based on desired creaminess.
  • 1 tablespoon lemon juice
  • ¾ to 1 teaspoon fine sea salt Adjust more to taste.
  • ½ teaspoon garlic powder Adjust to taste.

Method
 

Preparation
  1. Remove the block of tofu from its package and wrap it in a tea towel or paper towels.
  2. Gently squeeze the tofu over the sink to remove some of its water.
  3. Place the tofu in a bowl along with the yogurt and starting amounts of salt.
  4. Use a fork to mash the tofu, mixing it with the yogurt and seasonings until the 'curds' reach your preferred size.
  5. Taste the mixture and adjust the seasoning if needed.
Serving
  1. Serve as a topping on toast or bagels, mixed into salads, or alongside fruits and grains.
  2. Use it as a filling for wraps or in pasta dishes for added creaminess.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3 to 5 days. If it thickens, add a little extra yogurt to loosen it.
