Preparation
- Remove the block of tofu from its package and wrap it in a tea towel or paper towels.
- Gently squeeze the tofu over the sink to remove some of its water.
- Place the tofu in a bowl along with the yogurt and starting amounts of salt.
- Use a fork to mash the tofu, mixing it with the yogurt and seasonings until the 'curds' reach your preferred size.
- Taste the mixture and adjust the seasoning if needed.
Serving
- Serve as a topping on toast or bagels, mixed into salads, or alongside fruits and grains.
- Use it as a filling for wraps or in pasta dishes for added creaminess.
Notes
Store any leftovers in an airtight container in the refrigerator for about 3 to 5 days. If it thickens, add a little extra yogurt to loosen it.
