Main Ingredients
  • 2 slices whole grain bread Can substitute with multigrain or sourdough.
  • 1/2 avocado avocado, sliced Use ripe avocados for the best flavor.
  • 1/2 cucumber cucumber, sliced
  • 1 medium tomato, sliced
  • 1/2 cup mixed greens (spinach, arugula, etc.) Any leafy greens can be used.
  • 1/4 cup green goddess dressing Store-bought or homemade.
  • to taste Salt and pepper

Method
 

Preparation
  1. Toast the bread slices until golden brown.
  2. Spread the green goddess dressing on one side of each slice of bread.
  3. Layer the avocado, cucumber, tomato, and mixed greens on one slice of bread.
  4. Season with salt and pepper to taste.
  5. Top with the second slice of bread, dressing side down.
  6. Cut in half and serve.

Notes

Store leftovers in an airtight container in the fridge for up to a day. For best results, keep dressing separate until serving.
