Method
 

Preparation
  1. Slice the eggplant into even rounds.
  2. Sprinkle salt on the slices and let them sit for 15 minutes.
  3. Rinse the eggplant and pat it dry with a paper towel.
  4. In a bowl, toss the eggplant slices with olive oil and your choice of seasonings.
  5. Preheat the air fryer to 375°F (190°C).
Cooking
  1. Place the eggplant in a single layer in the air fryer basket.
  2. Cook for 15 minutes, flipping halfway through.
