Preparation
- Cut the potatoes into small bite-sized pieces. Place them in a bowl and cover with water. Let them sit for 30 minutes.
- After that, strain, rinse, and gently pat the potatoes dry.
Cooking
- In a large pan over medium heat, add the olive oil along with the potatoes and all the spices. Mix everything well.
- Cook the potatoes, stirring often, until they are golden brown on most sides. This may take some time, but trust me, it is worth it!
Serving
- Serve the cooked potatoes on tortillas with your favorite toppings such as shredded lettuce, chopped tomatoes, and vegan cheese. Drizzle with salsa or your favorite sauce.
Notes
If you have leftovers, store the cooked potatoes in an airtight container in the refrigerator for up to three days. Reheat the potatoes before serving. For spiciness, adjust cayenne. Optionally, customize with black beans, corn, or avocado.
