Noodle Ingredients
  • 8 oz ramen noodles Can substitute with gluten-free ramen if desired.
  • 1 batch Teriyaki Sauce Prepare this ahead of time if possible.
Vegetables
  • 6 oz fresh broccoli florets
  • 5 oz shiitake mushrooms Can substitute with other mushrooms if necessary.
  • 1 large carrot Sliced.
  • 4 pieces green onions Sliced.
Toppings
  • sesame seeds For garnish.
  • mung bean sprouts For garnish.
  • fresh cilantro For garnish.
  • peanuts For garnish.
  • cashews For garnish.
  • Sriracha For spiciness.

Method
 

Preparation of Sauce and Noodles
  1. Make the teriyaki sauce (or prepare this ahead of time).
  2. Cook your noodles according to package directions, leaving them al dente. Drain and rinse with cold water when finished.
Cooking Vegetables
  1. Cut broccoli into small florets. Slice mushrooms and carrot.
  2. In a large pan over medium-high heat, add broccoli, mushrooms, and carrot. Cover and sauté for 6-7 minutes or until crisp-tender.
  3. Using broth or water for a no-oil sauté method works well; add more as needed.
  4. While the vegetables cook, slice the green onions.
  5. Reduce heat to medium-low. Add the green onions, stir, and cook for 2 minutes.
Combining Ingredients
  1. Add teriyaki sauce and cooked noodles to the pan. Gently toss to combine and heat for 1-2 minutes until everything is warmed through.
  2. Serve hot with desired toppings.

Notes

If you have leftovers, store Teriyaki Noodles in an airtight container in the refrigerator for up to 3-4 days. Reheat before serving. For variations, consider adding sliced chili peppers or using different types of noodles like udon or soba.
