Preparation
- Preheat the oven to 400 degrees Fahrenheit.
- Place the garlic bulb in a baking dish and roast for 40 minutes.
- Once the garlic is done roasting, remove it from the bulb and add it to a blender.

Making the sauce
- Add the soaked cashews, vegetable broth, nutritional yeast, spinach, parsley, lemon juice, salt, and pepper to the blender.
- Blend everything until smooth.

Combine and Serve
- Toss the creamy sauce with the cooked pasta and serve warm.
- Top with more chopped parsley or nutritional yeast for extra flavor.
Notes
Store leftovers in an airtight container in the fridge for up to three days.
